They won't produce tubers by January.
You can take cuttings now but you need artificial lights and warmth to keep them growing throughout the winter.
Then, when you have a reasonable sized plant you stop it, and then take cuttings that emerge from the leaf joints.
Once that is done, then you grow the plant on to make a pot tuber for the following year.

Hopefully though your tubers will do all the work for you.
