Easy recipe for blueberry scones which I got off 'allrecipes' site a while ago. Makes 8 or 9 scones. Ingredients:- 260g Plain flour 65g caster sugar 1 level tbsp. baking powder Pinch of salt 85g softened/spreadable butter (I use Clover) 1 tbsp. flour 150g blueberries - washed 1 large egg 1 tsp. vanilla extract/essence 120 ml. milk Method:- Preheat oven to gas 6. Grease a baking tray or line it with baking paper. Mix together the 260g flour, caster sugar, baking powder & salt & rub in the butter. Mix the blueberries with the spoonful of flour & then fold them into the mix. Whisk together the egg, milk & vanilla extract in a jug & add most of it to the dry mix keeping a little back to glaze. Mix to form a ball of dough, flatten to about 1/2- 3/4 inch thick & cut out 8 or 9 circles. Place on the tray & brush with the egg/milk glaze. Bake for about 18-20 mins.

They are Cherry , I had to buy blueberries, big fat ones from the Co-op, in but the sharpness of the fruit offsets the sweetness of the scone nicely.

I have blueberries at present. They are big and fat too because everything here is oversized.
