These have self-set in my Sister's garden. They are HUGE (about 5'+ tall in once case), with brassica-like leaves (reminds me vaugly of Broccoli leaves), and a spectacular bloom. Any idea what they are ?

It looks like a lovely double pink poppy, possibly papaver somniferum 'Double Pink'. Lovely thing to have just appearing in the garden roofgardener!

When the seed pods dry sprinkle the seeds around and you will get loads more or just leave it to nature and you will still get loads more. That's poppies for you.

Any idea how we know when the seed pods are mature, and ready for picking/storing ?

The seed pods go dry, grey/brownish & quite hard roofgardener & will rattle when you shake them. You might want to put a paper bag over them when you cut off the seedheads to collect the seed or the tiny seeds might just ping out everywhere.
