This is a yummy recipe and really easy to make
1lb Sultanas 12 oz Plain flour 12 oz Caster sugar 8oz Butter 3 eggs 2 teaspoons baking powder 2 teaspoons Almond essence
1 tablespoon Demerara sugar to sprinkle on top of cake
Preheat oven to gas no. 3 Grease and line small roasting tin
Put sultanas into a pan,cover with water ,bring to the boil and cook for 5 minutes.Drain. Melt butter in a saucepan,add sugar and sultanas Mix eggs and almond essence together and add to butter etc. Sift baking powder and flour together and add to mixture. Put into tin,sprinkle demerara sugar on top.
Bake for approx. 1 1/4 hours,test with a skewer,leave in tin for a few minutes,turn out and cool on a wire rack
